Ranch Dressing or Dip

  • 1/2 cup light mayonnaise, homemade or store-bought

  • 1/2 cup plain nonfat yogurt
  • 1 teaspoon lemon juice
  • 1 teaspoon dry parsley
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2 or 3 dashes pepper 
  • Pinch dill (optional)

This dressing is easy to make.  In a medium sized bowl combine the mayonnaise, yogurt and lemon juice until smooth and creamy.  Add the seasonings.  Stir until well combined.  Store in a bowl or jar with a good lid in the refrigerator.  This can be used as a dip for veggies (our favorite way) or it can be spooned over a salad and tossed to coat the lettuce evenly.  It tastes very good.  If you like, you can add a few snips of green onion tops for color and flavor.  To use fresh parsley instead of dry, mince a tablespoon of parsley leaves very finely and add it to the dressing.  Omit the dry parsley in this case.

Makes 1 cup or 8 servings:  2 tablespoons each.
