Quinoa Muffins

Here’s a recipe for some simple and rather plain quinoa muffins. I am including some suggestions to add variety to the recipe at the end. They are quite hardy and delicious not to forget healthy. Bake up a batch and enjoy quinoa muffins for breakfast or as a simple snack.

Quinoa Muffins

  • 1 cup quinoa, rinsed
  • 1/4 cup vegetable oil
  • 2 cups all-purpose flour
  • 3/4 cup packed dark-brown sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup whole milk
  • 1 large egg
  • 1 teaspoon vanilla extract

Cook the quinoa in a cup of water. Bring the mixture to a boil and reduce to a simmer. Cover and cook for 10 to 15 minutes or until the liquid is absorbed and the quinoa is tender. You will end up with 2 cups of cooked quinoa. Set it aside to cool.

In the meantime combine the flour, sugar, baking powder and salt. Add the quinoa and stir until you have it worked into the flour mixture.

Combine the remaining ingredients in a cup or small bowl, then pour them into the flour / quinoa mixture. Stir it just until everything is combined.

Spray a regular sized 12 cup muffin pan with nonstick spray. Scoop the batter into the tins. Bake in a preheated 350F oven for 25 minutes.

Quinoa Muffin Variations

Here are a couple of “add-on” ideas for these rather plain quinoa muffins. Incorporate those ingredients with the quinoa into the flour mixture, then proceed as mentioned above.

  • 1/2 cup of raisins
  • 1/2 cup of chopped dried dates
  • 1/4 cup of dried apricots and 1/4 cup of chopped almonds
  • 1/2 cup of chopped apple pieces and a good dash of cinnamon
  • 1/4 cup of apple finely chopped apple or raisins and 1/4 cup chopped walnut pieces
  • 1/2 cup mashed banana and 1/4 cup walnuts
  • 1/2 cup fresh, frozen or dried blueberries

Of course you can also experiment with your own favorite muffin ingredients.

    Thanks for sharing this recipe! Quinoa is on my list of new foods to try out and my husband asked me to jot down some recipes that sounded good for the family using it too. As soon as I find a grocery store near me that sells it we’ll be having these muffins and a few side dishes using quinoa.

    Hi, I made these last week with a rice cooker, following the basic recipe, but added a streusel topping to them. A bit messy, with the topping scattering every which way, but they were edible to the end. Since I have the extra cup of quinoa, I intend on making these again, but adding walnuts and ginger this time. Oh, yeah, I also used the red quinoa for this. Goes into the cookbook. Thanks for posting.

    Loretta,

    My grocery store carries really small boxes of quinoa near the flavored rice pouches – very expensive also!! BUT I also found it the next isle over with the Jewish foods…larger boxes and less expensive :) If you can’t find it near the rice and pastas, you might check one of the ethnic food sections.

    I looked all over for quinoa in the many large chain grocery stores near me but no luck. Finally found it at – of all places – Costco. Of course it was a big bag and I was reluctant to buy it since I didn’t even know if I liked it, but I’m glad I did. Much cheaper than buying at a specialty/health food store, and we’ve gone through it in under 2 months. My husband is not exactly one to try new things, but he’s quite readily accepted quinoa as a rice substitute – if he can do it anyone can!

    I think my favorite quinoa recipe was one I made for dinner the other night. I cooked 1 cup of quinoa in 2 cups of chicken broth. When it was tender, I stirred in 1/2 cup (or so) of toasted sliced almonds and 3/4 – 1 cup Craisins. My 4 kids DEVOURED it – and two wanted me to make it the next day for breakfast.

    Wonder if I can add quinoa to pumpkin muffins….

    If your grocery store has a bulk bin section, check that for quinoa. Mine sells it in a couple aisles in boxes but it’s much more expensive that way. I think it was $5 per pound from the bulk section and a pound is a LOT of quinoa!
