My Best Light Brownies

  • 1/3 cup margarine or butter; melted

  • 1-1/4 cups sugar
  • 1/3 cup nonfat buttermilk or yogurt
  • 2/3 cup unsweetened cocoa powder
  • 1 medium egg plus 2 egg whites
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • 1 cup whole wheat pastry flour, or a scant (7/8) of a cup of regular whole wheat flour or 1 cup all-purpose flour
  • 1/4 teaspoon baking soda

First melt the margarine or butter in a large microwave proof bowl.  When it is liquid, add the sugar and buttermilk.  Using a handy whisk, stir the mixture until it is well combined.  Add the cocoa powder.  Whisk again, until you have a lovely dark mass.  Taste judiciously and approve heartily. Add the eggs and vanilla.  Beat very well.  Add the salt, flour and baking soda.  Stir it all up until it's well mixed.  Turn the mixture into a well oiled 9 by 13-inch pan.  Bake at 350° for exactly 20 minutes.  Do Not Overbake.  Remove the brownies from the oven and allow them to cool slightly.  Cut 4 by 6, into 24 slices.  Eat a brownie and marvel at how good healthy foods can taste, mmmmm: life is good.

These brownies are a treat.  I do not prepare them often because they are extremely tempting to me and Fred both so we tend to over-indulge.  When you need something very rich, sweet and within your range of healthy foods, this one fills the bill.  Excellent for church potlucks.
