Lemon Slushie

  • 1 cup water

  • 1/2 cup lemon juice (fresh or bottled)
  • 1/3 cup honey or 1/2 cup other sweetener of your choice (Stevia is a great natural - no calorie alternative that will make this slushy even more figure friendly.
  • 4 cups ice cubes, or enough to almost fill the blender

Get out your blender.  Add the water and lemon juice.  Pour in the honey or other sweetener.  If you use honey then lighly oil the measuring cup before measuring the honey.  This will make it all slip out more easily.  Add the ice cubes.  Process the mixture at high speed for 2 full minutes.  The ice should be completely chopped and the mixture will be a lovely golden color.  Divide the mixture between 4 12-ounce glasses.  Garnish with a lemon wedge and a tall straw.  Serve immediately. 

Lemon-Mint Slushies:  If desired you may add a few mint leaves to the blender while you are processing.  If you are using dry mint then 1/2 teaspoon will be enough.  This is quite invigorating, especially on a hot day.

Makes four 12-ounce servings.
