Ham or Sausage & Potato Casserole

  • 1/3 cup all-purpose flour
  • 3 cups reconstituted milk
  • 1 tablespoon margarine
  • 1/4 teaspoon pepper
  • 1-1/2 pounds or 3 cups cubed turkey ham
  • 6 cups peeled, sliced potatoes

Heat the margarine and 2 cups of milk in a saucepan. Meanwhile combine the flour and the remaining 1 cup of milk in a pint sized jar with a good lid. Screw the lid on tightly. Shake the mixture together until the flour dissolves in the milk. You are making something called a slurry. Pour the slurry into the milk mixture heating on the stove. Use a whisk to stir the mixture as you bring it to a boil. When the mixture boils, allow it to bubble for a minute or two.

Arrange the potatoes and ham in a large oiled casserole (3 quart size), or a 9″ by 13″ rectangular pan. Then pour the sauce over top. Press the ham and potatoes into the sauce, so they sink to the bottom. Cover the pan or pot with a lid or tin foil. Bake at 350° for an hour, or a little more. Serve hot with Coleslaw and Green Beans and plain whole wheat muffins. The family will sing your praises in the streets.

To Make Sausage Potato Casserole: Sausage can be substituted for the ham. Fry up a pound of turkey sausage in a skillet, breaking it up into small pieces with a fork. Omit the margarine. Add the flour directly to the cooked sausage in the skillet. Stir it up so that the meat is evenly covered with the flour. Gradually add the milk. Add the pepper if you like, or leave it out if your sausage is spicy. Bring the mixture to a boil and simmer for about a minute. Pour this sausage gravy over the potatoes in an oiled casserole. Cover the dish with a lid or tin foil and bake it as directed. Very good.
