One-Egg Honey Cake

  • 3/4 cup honey

  • 1/4 cup melted margarine or butter
  • 1 egg
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 cup whole wheat flour (sifted)
  • 1/2 teaspoon baking soda

In a large bowl beat together the honey, margarine or butter, egg, buttermilk and vanilla.  Mix until emulsified and smooth.  Add the salt, flour and baking soda.  Beat well.  Turn the batter into a well oiled 9-inch round pan.  Bake at 350° for 25 minutes.  Remove from oven and cool before serving.  This may be frosted if desired.  It is the equivalent of a Plain Yellow Cake.  This recipe is easily doubled for a layer cake, or if you want enough batter to bake it in a 9 by 13-inch pan.
